Calypso Salmon Recipe

I have a wonderful Salmon Recipe for you all.  Now, I’m not a huge fan of fish, and have family that isn’t either, but they LOVE this recipe.  Originally this was a bourbon glazed salmon recipe, but I never feel like paying for bourbon since I don’t drink it, so I played with the recipe and changed it a bit, made my own recipe and called it Calypso Salmon.  The ingredients in this remind me of the tropics, so that’s where the name came from.  This marinade has brown sugar, soy sauce, fresh grated ginger and lime juice and the combination makes for an AMAZING marinade and glaze for Salmon.

Salmon was on sale last week at Publix and is on sale this week at Winn Dixie, so I thought it would be a great recipe to make.  This is one of my family’s favorite meals that I make and they were thrilled on New Year’s when I told them that was on the menu for dinner that night!  This is a very easy recipe to make.

This Calypso Salmon Recipe will take you right to the islands as the taste of Ginger, lime, brown sugar and soy sauce hit your lips. Enjoy this fun and simple recipe!

Ingredients
  • 1 Cup of Packed Brown Sugar
  • ¼ Cup low-sodium soy sauce
  • 2 Tablespoons Fresh Lime Juice
  • 2 Teaspoons peeled grated Fresh Ginger Root
  • ½ Teaspoon Salt
  • ¼ Teaspoon freshly ground black pepper
  • 2 garlic cloves, minced
  • 8 (6 ounce) Salmon Fillets (about 1 inch thick)
  • Cooking Spray
  • 4 teaspoons Sesame Seeds

Instructions
  1. Combine the fist 7 ingredients in a large zip-top plastic bag, add salmon fillets. Seal the bag and marinade in the refrigerator 30-60 minutes, turning 1 time during the marinade. Remove the Fillets from the bag.
  2. Preheat broiler
  3. Place Fillets on broiler pan coated with cooking spray. Spoon 1 tbsp of the marinade over each Salmon Fillet. Broil 11 – 20 minutes. Cooking time varies on thickness of fillets. Cook until the center of fillet flakes apart with fork. (it will turn a light pink/peach color)
  4. Remove from oven and top with Sesame Seeds
  5. Serve, you can serve Wild Rice and Green Beans as a side!

I have a BIG Football fanatic in my house.  Sunday afternoons and evenings are spent watching lots of fun football games!   Today I treated my husband to some Homemade Boneless Buffalo Chicken and a delicious Blue Cheese Dressing that I also made from scratch.  My husband, Joe, is pretty picky about how his chicken is cooked, and no matter where we go for wings, they are never quite ‘done’ enough for him, and you can never seem to find really good chunky blue cheese dressing anywhere.  So, I decided to search through my recipe books and see what I could find.  I found this recipe in ‘The Best of America’s Test Kitchen’ Magazine 2010 issue.  This magazine is created by top chef’s across the country, who figure out a way to make their amazing dishes at home without all of the fancy equipment they have. So, I decided whip my hubby and the kids up a batch of Boneless Buffalo Chicken Wings and it was a HUGE hit!  They loved the wings and the dressing!

With the playoffs approaching, I thought this would be a great recipe to share with you all!

Boneless Buffalo Chicken Recipe and Blue Cheese Dressing Recipe

Ingredients
CHICKEN:
  • 4 Boneless Skinless Chicken Breasts cut into 1½ inch chunks (about 1½ lbs)
  • ½ cup of Buttermilk
  • ¾ cup Frank’s hot wings Buffalo Sauce
  • 1 teaspoon salt
  • ¼ cup sugar
  • 1 tablespoon unsalted butter
  • 1½ cups cornstarch
  • 4 large egg whites
  • ½ cup unbleached all-purpose flour
  • ½ teaspoon baking soda
  • 4 cups vegetable oil
BLUE CHEESE DRESSING:
  • ¾ cup of High Quality Blue Cheese (I found a great block of Blue Cheese in the Deli Dept at my local Grocery store)
  • ¾ cup Mayonnaise
  • 6 tablespoons sour cream
  • 1½ tablespoons cider vinegar
  • ¼ teaspoon pepper
  • ⅛ teaspoon garlic powder

Instructions
FOR THE CHICKEN:
  1. Combine the Buttermilk and salt in a large Zipper-locked Bag and add the Chicken. Refrigerated for 30 minutes (up to 2 hours)
  2. Combine hot sauce, sugar, butter, water, and 2 teaspoons of the cornstarch in a saucepan. Whisk over medium heat until it thickens (about 5 minutes)
  3. In a separate mixing bowl, combine the flour, baking soda, remaiing cornstarch and 6 tablesppons of the hot-sauce mixture and stir until the mixture looks like a course meal.
  4. In a shallow (separate dish), whisk the egg whites until they are foamy
  5. Remove the Chicken from the marinade and pat dry with paper towels
  6. Coat half of the chicken with the egg whites, then dredge in the cornstarch mixture, transfer the chicken to a plate and repeat with the remaning chicken.
  7. Heat the oil in a Dutch oven (or deep saute pan) to 350 (I don’t have a thermometer, so I heated it on medium high heat. You want to be careful with this step….SEE NOTE BELOW
  8. Fry half of the chicken until golden brown (about 4- 5minutes) turning half each piece halfway through cooking
  9. Transfer the cooked chicken to a paper towel lined plate
  10. Return the oil to the correct temperature and repeat with remaining chicken
  11. Warm the remaining hot-sauce mixture in a large bowl and toss to coat
BLUE CHEESE DRESSING:
  1. Combine all of the ingredients in a food processor and process until smooth (or chunky if you like to have some chunks of blue cheese) Scrape down the sides of the processor if needed while blending.
  2. Serve
  3. (the dressing can be refrigerated for up to 1 week in an airtight container)

Notes
NOTES ON OIL TEMPERATURE: Be careful with this step…too hot and it will burn very quickly, too cool and the breading will fall off. Test a few pieces first to make sure you have the temp right. It should sizzle good as soon as you place the chicken in.

NOTES ON CHICKEN: I double this recipe when I make it for my family. I keep the chicken that I have cooked up in a cake pan in the oven at 200 Degrees while I cook the remainder of the chicken, then toss with sauce.

Earlier in the week I shared my Italian Pasta Sauce Recipe with you all, so I thought I’d also share our family’s recipe for Italian Meatballs with you too! This is my husband’s Mom’s recipe (Mama Guzzi) and a family favorite. She was a wonderful cook and made amazing homemade meals. Mama Guzzi has alzheimer’s and is no longer able to make these delicious meals. Pop Guzzi put a book together with all of Mama’s recipes together for all of the kids and I’m excited to pass them along to your families!

Italian Meatballs Recipe

Serves: 18 Meatballs

Ingredients
  • 1 lb Ground Chuck Beef
  • 1 lb Ground Italian Mild Sausage
  • 1 cup Italian style bread crumbs
  • 2 cloves Fresh Garlic – Minced
  • ¼ cup Fresh Flat Leaf Italian Parsley – Chopped
  • ½ cup Romano Grated Cheese
  • 4 tbsp Parmesan Grated Cheese
  • 2 Eggs
  • Salt & Pepper to taste

Instructions
  1. Combine all ingredients in large mixing bowl
  2. Mix with your hands
  3. If the Mixture doesn’t seem to stick together add a LITTLE bit of milk (you don’t want it to be too mushy)
  4. Wet your hands with water
  5. Form Meatballs (I make them about the size of a golfball – see picture below)
  6. Rolled Italian Meatball for recipe
  7. Heat 1 cup of Vegetable oil in pan and heat over Medium/Low Heat
  8. Place the Meatballs in the pan and turn them to make sure all sides get browned
  9. Cook about 20 minutes until meatballs are cooked all the way through (time will depend on the size of your meatballs)
  10. Remove the Meatballs from the pan and Enjoy!

It’s recipe time again!  For those of you that don’t know this, my husband is Italian, and grew up in a family where Mama made everything from scratch.   She graciously shared all of her recipes with me, and so I am going to pass this along great Homemade Pasta Sauce Recipe on to all of you.  We have a family of 6, and obviously, being Italian,  having pasta sauce is a big part of our family meals.   About 3-4 times a year Joe (my husband) and I make a big batch of spaghetti sauce and then freeze it up.  It takes several hours, we really take time with each step, but the end result is AMAZING Sauce!

We have adjusted this recipe over the years and found a way to sweeten the sauce without using any sugar or wine.    We’ve  also tried different brands of tomatoes and puree, and found that the best brand to use is Hunt’s.  So, keep your eyes peeled for a sale on Hunt’s tomatoes and use coupons, and you score cheap Pasta sauce!

I want to say that this will make about 8 containers full of sauce.  Depending on the size of your containers, but you’ll have enough to last quite a while.  We used to add about 6 bottles of water to thin it out, but I like THICK sauce, so we opted to have the thicker sauce which means a little less sauce this time. ;-)

This is a Super Easy and Delicious Homemade Pasta Sauce Recipe. It’s a bit time consuming, but the end result is that you will have a freezer full of Sauce and won’t have to make it again for months! Is there anything better than Italian Pasta sauce made from scratch with love?! Your family is going to love this, and you’ll feel good knowing you’re filling their bellies with food that isn’t full of preservatives and sugar.

Ingredients
  • Ingredients for Pasta Sauce Recipe
  • (6) Hunt’s Puree 29 oz cans
  • (6) Hunt’s Whole Tomatoes 29 oz cans
  • (5) Medium Yellow Onions – chopped
  • (2) Whole Garlic – minced
  • Fresh Basil – rinsed and roughly chopped (about 1 cup)
  • 2-3 Medium Carrots – peeled and both ends cut off
  • Olive Oil
  • Salt
  • Pepper

Instructions
  1. Use 3 medium saucepans
  2. Fill each Sautee Pan with about 1½ cup of Olive Oil and heat on medium-low heat
  3. Chop Onions (I use the food processor and pulse it manually to cut down on tears.)
  4. Peel and Mince Garlic
  5. Divide the onions in 2 of the sautee pans and cook until clear
  6. SLOWLY cook the garlic in the 3rd sautee pan being very careful not to burn (you do not want it to turn brown)
  7. Fill a large pot with the 6 cans of Hunt’s tomato puree*
  8. Open the 6 cans of Hunt’s whole tomatoes, de-seed (I cut the stem end off, cut in half and rinse under water gently pulling the seeds out..also remove any peels they may have missed) reserve the juice in the cans**
  9. Add the Whole Tomatoes to the Puree
  10. In a fine strainer, strain the reserved juice from the whole tomatoes and add all reserved juice to the puree and tomatoes
  11. Add the Carrots+
  12. Add the Sauteed Onions and Garlic (with oil) and chopped Basil
  13. Salt and Pepper to taste
  14. Simmer for about 2-3 hours
  15. Remove the Carrots
  16. Pour the Sauce into Plastic containers, let cool and then Freeze.
  17. Homemade Pasta Sauce in Plastic containers for storage in Freezer

Notes
*If you don’t have a really deep pot, you may need to use 2 pots and divide the ingredients between the 2

**It is important to deseed the tomatoes. The seeds will make the sauce bitter

+The Carrots actually add the sweetness. Add the whole carrot peeled carrot. The sweetness of the carrot balances out the acidity of the tomatoes. Great trick that works amazingly well.

You can add water if you like your sauce thinner or want to make even more…we like thick sauce, so we didn’t add any water to our sauce.

I have a fun Craft/Recipe for you all today!  My kiddos and I made these adorable Pilgrim hats the other day.  These are SUPER easy to make and a fun craft/recipe to do with the kids!  You just need 3 ingredients to make these.  If you have a lot of kids coming to your house for thanksgiving, this would be a great craft to have them make after the Thanksgiving meal!

Easy Pilgrim Hat Treats that are just as delicious as they are fun to make!

Ingredients
  • Oreo Fudge Peanut Butter Cookies
  • Reese’s Miniature Peanut Butter Cups
  • Decorator Icing Tubes

Instructions
  1. FREEZE your Cookies and Reese’s Peanut Butter Cup before you start this.
  2. Remove all the wrapping from the Reese’s Peanut Butter Cups. (The chocolate is less likely to stick to the wrappers when they are frozen)
  3. Take 1 Oreo Fudge Peanut Butter Cookie and place a small amount of icing on the top center of the cookie
  4. Place 1 Reese’s Peanut Butter cup (large side down) on top of the Icing
  5. Pipe a small line of icing around where the Reese’s Peanut Butter cup meets the cookie
  6. Pipe a small square as the buckle on the hat
  7. Refrigerated for about 10 minutes
  8. Presto you have Pilgrim Hats!

I have a delicious recipe for you this week!  Every new recipe I make for my family I ask them to rate on a scale from 1 – 5.  (5 being the highest)…This meal scored a 5+.  So, needless to say, it was a hit with all 6 of us!   It’s super easy to make, tastes amazing, and most of the items are on sale this week, which makes it affordable too!

I cook for a family of 6, but cook as if I’m cooking for 9 because my husband and 14 year old son easily eat enough for 4.  ;-)    The Smoky Bacon Pork Chops Recipe below will serve 4, and you can print it up buy clicking on the ‘Print’ button below on the recipe!  Also, I have put the sales you can find this week to make this meal, and of course the coupons you can use are all listed below this recipe for you.

Smoky Bacon Pork Chops Recipe

Delicious and easy recipe for Pork Chops that the whole family will enjoy!

Ingredients
  • 4 Bone-in Pork Chops (1 inch thick)
  • ½ cup cooked Bacon Pieces
  • ½ cup Mayonnaise
  • 2 tsp Chipotle Pepper Sauce (I used Tabasco Chipotle Sauce)
  • Mesquite Seasoning (I used McCormick Grill Mates Mesquite seasoning)
  • 6 oz Pepper Jack Shredded Cheese

Instructions
  1. Preheat Oven to 425° F
  2. Line Baking Sheet with Foil
  3. Cook up Bacon (make sure it’s crispy so you can crumble it into pieces)
  4. Season Pork Chops with Mesquite Seasoning on both sides (wash hands)
  5. Combine Cheese, Bacon, Mayonnaise and Pepper Sauce in a large bowl
  6. Brown Seasoned Pork Chops in Skillet over Med/High Heat for about 30 seconds each side (just enough to brown them a bit…no need to cook them through)
  7. Place Pork Chops on Foil lined Baking Tray
  8. Spread Cheese Mixture Evenly over each pork chop
  9. Place in Middle Rack of Oven, Bake 10 minutes (possibly a little less or more depending on thickness of pork chops)
  10. Increase Oven Heat to Broil, and broil for 2-3 more minutes or until pork is 145° F
  11. Serve

Notes
You can complete your meal with a fresh salad or green beans, some wild rice, Cuban bread. For a less Spicy Version you can use half the Pepper Sauce and use 3 oz Pepper Jack Cheese and 3 oz Monterey Jack Cheese (or 6 oz Monterey Jack cheese).

I have to admit that Thanksgiving is my absolute favorite Holiday of the year!  I love all of the cooking, baking and family time!  My kids love cooking with me…although I think they enjoy eating all of the yummy treats even more! LOL

This week I have a fun Acorn Treats Recipe for you to make.  My 3 year old helped me make these, so they are very easy and fun to make.  It’s a craft and recipe all in one!  These are great to use to decorate a kids Thanksgiving table with! Later I’ll be showing you some great table decorations for both the elegant adult table and also for a fun filled kids table!

Ingredients
  • Ingredients Needed to Make Acorn TreatsBite Size Nutter Butter cookies (1 Bag)
  • Hershey’s Chocolate Kisses (1 Bag)
  • Chocolate Chips (Milk Chocolate)
  • Wax Paper
  • 1 Ziploc type bag (quart or sandwich size)

Instructions
  1. Line a baking tray with Wax Paper
  2. Unwrap 24 (or more if you want) Hershey’s Kisses (the most time consuming part)
  3. Melt ¼ cup of the Chocolate Chips in a Microwave Save Bowl until melted (about 1 minute – stir half way through)
  4. Carefully scoop the Melted Chocolate into 1 corner of the ziploc bag
  5. Snip a VERY SMALL piece of the corner of the bag using scissors (this acts as a ‘Baker’s Icing bag’.
  6. Place a small amount of the melted chocolate in the center of the flat side of the Hershey’s Kiss (pictured below)
    Place small dot of melted chocolate onto the top of the flat side of the Hershey's Kiss
  7. Place 1 Nutter butter Cookie on top of the Melted chocolate dot
  8. Place a VERY SMALL dot of the melted chocolate on the top of the Nutter Butter cookie in the center
  9. Place 1 Milk Chocolate Chocolate chip on the dot
  10. Place the completed ‘acorn treat’ on the wax paper lined pan and repeat process until all 24 treats are done.
  11. Place the tray in the refrigerator for about 20 minutes until the melted chocolate is hardened and Enjoy!

Notes
You may want to separate some of the nutter butter cookies and remove the peanut butter, so they all look a little different. (see picture at top of recipe)
